Gluten Free Quinoa Mini Pizza



Since starting my Wheat Belly experiment, I have been looking online for gluten free recipes that are also healthy and Weight Watcher friendly.  Luckily, the internet is a wonderful thing for finding gluten free recipes.  

I came across the Gluten-Free Quinoa Pizza Pizza Bites recipe from PopSugar and knew I had to give it a try.  

For the recipe, you will need:

1 cup uncooked quinoa
2 large eggs
1 cup chopped onion
1 cup shredded mozzarella cheese
2 teaspoons minced garlic
1/2 cup fresh basil, chopped (or 2 tablespoons dried)
1/2 cup cherry tomatoes, diced
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon dried oregano
Pizza sauce for dipping

Check out the directions here.  One mini pizza is 1 Weight Watchers Point.
