Weight Watchers Rolled Chicken Cordon Bleu


While using Weight Watchers I eat a lot of chicken, because chicken is lean and healthy.  Since I eat chicken often (probably once a week), I try to find different chicken recipes to change it up.  When I found the Weight Watcher Rolled Chicken Cordon Bleu, I knew it sounded like a dish I would enjoy. 

The recipe is pretty simple and is only 7 points for a piece of chicken.

For the Chicken Cordon Bleu you will need:

Cooking Spray
1 Pound uncooked boneless skinless chicken breasts (four ounce pieces)
3 ounces cooked lean ham
3 ounces low-fat Swiss Cheese
¼ cup all-purpose flour
¼ cup honey mustard
½ cup seasoned bread crumbs, Italian-style
Tooth picks

Instructions:

Preheat over to 400 degrees.  Coat a baking sheet with cooking spray.

Place chicken breasts between two pieces of plastic wrap (I used wax paper) and pound to ¼ inch thickness.  If you don’t have a meat mallet I used a rolling pin and it worked perfectly.

Arrange 1 slice of ham and 1 slice of cheese on each chicken breast.  Then starting on the shorter end of the chicken, roll up breast into a tight pinwheel.  Tuck in ends and secure with toothpicks.

Place flour, honey mustard and bread crumbs in 3 separate bowl

Add chicken to flour, turn to coat.  Transfer chicken to honey mustard; turn to coat.  Place chicken in bread crumbs; turn to coat.

Transfer chicken to prepared baking sheet and coat with cooking spray. Bake until chicken is golden brown and cooked through, about 40 minutes.  Remove toothpicks and serve.
