Gluten-Free Oven "Fried" Chicken


In the past I have made a Weight Watcher's Oven Fried Chicken recipe that is absolutely delicious.  Unfortunately, that recipe contains wheat therefore it is off limits thanks to my giving up wheat.  J and I were really craving healthy fried chicken so I started looking for a gluten-free option.  I found this recipe and decided to adapt it to create a recipe.  

Ingredients:

Cooking Spray
4 Chicken breasts 
2/3 cups of Gluten-Free Bisquick
1/3 cup of low fat buttermilk
2 egg whites
1/2 tsp of Season Salt
1/4 tsp of pepper

Instructions:

Preheat the oven to 400.


Combine bisquick, season salt and pepper.  



Combine egg whites and buttermilk.

Next take chicken soak first in the egg white mixture then dip in the bisquick mixture and place in a baking pan (that is sprayed with the cooking spray).

Repeat until all chicken is coated.


Place the dish in the oven and cook for 35 minutes.  Flip the chicken and cook an additional 15 minutes or until chicken is cooked through.

*I had a problem with my chicken sticking so make sure the pan is completed coated with the cooking spray.

One chicken breast is 10 Weight Watchers points.  

This recipe was delicious.  The chicken did not look great due to the sticking but all and all it was really tasty.
